“Make it” Monday: Food Edition – DIY Coconut Chia Pudding Bowl

Here is a super easy recipe for something that is both healthy and tasty!  Chia seeds are great for fiber, anti-inflammatory omega-3s & will help you debloat after all that Super Bowl goodness you may have had.

You can make this recipe for a quick and easy breakfast or a tasty dessert at night.  Either way, you can’t go wrong!  I got all my ingredients from Trader Joe’s.

Tip:  This takes about 2-4 hours to set, so it may be best to make it the night or day before and chill in the refrigerator.

What You’ll Need:

  • Chia Seeds
  • Coconut Milk
  • Agave Syrup
  • Vanilla Extract
  • Fruit(s) & Nut(s) of your choice
  • Measuring Cups
  • Bowl

 Instructions:

1.  Pour 1/4 cup of Chia seeds into bowl

2.  Pour 1 cup of coconut milk into bowl (I used light coconut milk, but any is fine)

3.  Pour 1/4 cup of Agave Nectar into bowl

4.   Add 1 Tbsp. of Vanilla Extract or your choice of flavoring if any

5.  Stir & Set

Be sure to stir well so chia seeds don’t stick & set in fridge for ~2-4 hours

6.  Add the Fruit(s) and/or Nut(s)

Now it’s time to customize your chia pudding.  Add anything you want – The Chia Pudding will make it taste 10x better 🙂  Here, I used Bananas, Blueberries, Pomegranate Seeds & a Blood Orange.  Next, I am going to try Mangoes 🙂 YUM!

So, there you have it!  A super easy and super healthy breakfast you can make and take with you to work as a snack or save for a dessert at dinner.
